One of my favorite things about the water warming in the Spring, is the arrival of the Jack Crevalle.
In my opinion the Jack is about as tough as they get when fishing inshore in Ormond Beach/Daytona Beach. Insane surface blasts and strong runs will leave you smiling from ear to ear!
I recently tasted Jack Crevalle for the first time a few weeks ago and was delighted to find out how good it was. It has a meaty consistency, similar to chicken. Very mild in flavor and not fishy at all. I was warned to cut the dark strip out of the center and I did follow that advice. On a recent fishing charter with one of my favorite regulars Webb C. we got into some nice Jack Crevalle in Daytona Beach. I asked him if he wanted to take the Jack challenge and he accepted. We threw one on ice and I filleted it up for him at the end of our trip. He sent me this photo soon after he got home and said it was “dam good”.
